Fig and Balsamic Lamb Shanks with Pomegranate Couscous

Ingredients

  • 1 package Savora® Sous Vide Fig and Balsamic Lamb Shanks
  • 1 cup chicken broth
  • 1 cup couscous
  • 1 teaspoon butter
  • ½ cup chopped, dried apricots
  • ¾ cup fresh pomegranate arils
  • 1 orange, juiced and zested
  • 1 tablespoon chopped mint

Directions

  • In a saucepan, bring the broth to a boil. Add couscous, apricot, salt and butter. Remove from the heat; cover and let stand 5 minutes. Fluff with a fork.
  • Add the pomegranate, orange juice and zest and mint; toss to combine.
  • Heat lamb shank according to package directions; serve with couscous.
